Check out Brooke's first big catch. Her goal is to catch every fish on her South Carolina fishing poster. Brooke can now check off Dolphin, King Mackerel, Little Tunny and Baracudda....

Weather was great. Live baited for pogies and ended up about 24 miles out to catch amber jack and cobia. Good trip... Had a blast. July 4th week is booking up quick so make sure you reserve your slot early.

Caribbean Cobia on a Sweet Potato Bed.
Lemon Basil Thyme seasoned filets with a dab of butter. Sweet potatoes steamed then drizzled with lemon juice, orange juice, brown sugar, ginger root. Served with a tri color pepper, onion, white wine and butter reduction. Delicious.... Sounds high maintenance, but don't be fooled. Quick and easy once the reduction is done, can't wait to try the same reduction with some grouper.

The longest day of the year turned out to be another great day of fishing. "Windy City" customers weren't bothered much by the morning wind, catching Mackerel, Barracudas, and Cobia. If you haven't had the opportunity to try Cobia, you don't know what you're missing. Next time try a little pesto with tomato and onion grilled on a cedar plank...
